Short ribs are cut from the rib and plate section of the animal — the same area as the fore-rib. They consist of a short section of rib bone with a thick layer of beef on top, heavily marbled with fat and connective tissue. When cooked low and slow, the connective tissue dissolves into gelatin, creating an extraordinarily rich, sticky, melt-in-the-mouth result.
Season generously and sear all over in a very hot pan. Transfer to a deep casserole with red wine, beef stock, onions, garlic and herbs. Cover and cook at 150°C for 3.5-4 hours until the meat is falling off the bone. Rest for 10 minutes. The braising liquid reduces to a luxurious sauce — skim the fat and serve alongside.
Absolutely — short ribs are outstanding smoked. Season with salt, pepper and a little garlic powder. Smoke at 120°C over oak for 6-8 hours until probe-tender (around 95°C internal). Spritz with apple cider vinegar every 2 hours to keep the bark moist. Rest for 30 minutes before serving. Sometimes called "beefy ribs" on the BBQ circuit for good reason.
