Francois le Saint Sancerre Calcaire 2023, is a Sauvignon Blanc from the Loire Valley, France, produced from vineyards located mainly on limestone-rich soils of the Buzançais of the lower Kimmeridgian, in Sancerre. For this wine, the Vignerons have chosen a fermentation with indigenous yeasts, also respecting, for the work in the cellar, the rhythm of the lunar calendar. It ages in steel in contact with its own yeasts for a full year, before being bottled with a minimal amount of sulfur. The result is a wine of great complexity, reminiscent of ripe apple and citrus fruits, citrus fruits and spices. On the palate, the sip is enveloping, fat but made very pleasant by a refreshing and clean acidity, which slowly leaves room for a persistent  flavor.
