"This is rather exceptional GSM. Full-weighted, yet with no dearth of tannins or sense of real freshness. Savory accents of Australian bracken from blue gum, clove and licorice strap. Darker cherry, iodine and raspberry bon bon. Saddle leather and the gristle of charcuterie, nigh on game. The finish is a little sweet, with a tang of reduction. "Choc-hazelnut, very much like Guylian sea shells, which I like. Red and blue fruits, a little pepper and spice, fennel seed and dried herbs. It’s nutty and slightly meaty, a gentle saline character, a light chalky chew to tannin, flavoursome with a some freshness to it, and again that choc-nutty finish offering good length."
