Noble One Botrytis Semillon was created by Darren De Bortoli at the family winery in Bilbul, NSW. Noble One Botrytis Semillon owes its complexity to Botrytis or Noble Rot. Since the release of the first vintage in 1982, Darren and his winemaking team have perfected making wine from fragile, heavily botrytised fruit into the distinctive De Bortoli style recognised as Australia's benchmark sweet white wine. Since its release, Noble One has been awarded over 164 Trophies and 478 Gold Medals.

Grape variety: Sémillon. Current vintage: 2018. Regional information: The De Bortoli family first settled in Bilbul, in the Riverina region of southern New South Wales, in 1928. The fruit for Noble One is sourced from De Bortoli's own vineyards in Riverina as well as one other long-standing supplier of high-quality Botrytis Semillon.
Tasting notes: Layers of intensely ripe botrytis fruit, creamy citrus, nectarine, honey and cumquat blended with attractive oak. Unctuous with a slight touch of refreshing acidity gives length and structure which then delivers a beautifully balanced wine.
Alcohol by volume: 10. Units: 3.8. Vinification details: The fruit is carefully monitored to ensure the botrytis and sweetness levels are in perfect harmony before picking. Each vineyard is processed individually and the wines are matured in a mix of new and old French oak barrique after fermentation. Only the very best parcels are used to create the flagship Noble One.
