The first fermentation took place in stainless-steel tanks. Once completed, the wine was racked and underwent full malolactic fermentation. Rare Rosé 2021 marries 60% Chardonnay and 40% Pinot Noir grapes (some as red wine) in a blend of 12 crus. The wine was kept on its lees for eight years before disgorgement, when a dosage of around 7g/l was added.

The Champagne is crystal clear with a radiant, pale copper, rose quartz colour. The first aromas to emerge are cherry blossom, forest fruits, and lychee, followed by more pronounced notes of turmeric, ginger, white pepper, citrus, and deeper notes of white peach and orange blossom. Delicate, vibrant and expressive, Rare Rosé 2012 adds a new dimension of the Maison's style, and showcases all that is great about the vintage, resulting in a champagne of great length, complexity and longevity.
