Mess Management Specialists prepared and served nutritious, appetizing meals to sailors around the world. They managed ship's galleys and shore dining facilities, planned menus, ordered food supplies, supervised food preparation, maintained food service equipment, ensured food safety and sanitation, and managed food service budgets. MS personnel understood that good food was critical to morale and that the mess deck was often the social center of shipboard life.

Professional Food Service Excellence

Mess Management Specialists worked in challenging environments—preparing meals in galleys that pitched and rolled in heavy seas, cooking for thousands aboard aircraft carriers, managing limited food storage on smaller ships, and adapting menus to accommodate dietary restrictions and preferences. They worked long hours, often starting before dawn to prepare breakfast and finishing late after cleaning up from dinner service.
