Kilchoman call themselves "Islay's Farm Distillery." While all of their single malts are interesting, unique, and tasty, their 100% Islay bottlings truly embody the fulfillment of their farm distilling mission. This whisky is distilled from a combination of Concerto and Publican barley grown on Kilchoman's Islay farm and harvested in 2014 and 2015. The barley was malted on Kilchoman's own malting floor, smoked with peat from nearby Loch Gorm, and mashed, fermented, distilled, and aged in house. After at least nine years ageing in ex-bourbon casks, this 54 barrel blend was bottled without chill filtration or color added at 100 proof. Flavors of vanilla and citrus are tempered by earthy peart smoke, with candied fruits and white pepper with more smoke on the finish.
