GYOKURO

Also known as Jade Dew—"Gyoku" meaning jade and "Ro" meaning dew—Gyokuro is considered the precious pearl and jewel of Japan. The tea leaves are shaded from sunlight for three weeks before harvesting, which increases their chlorophyll and L-Theanine content. This process gives Gyokuro its darker green leaves and a sweeter taste compared to other Japanese green teas. Gyokuro is one of the most expensive teas in Japan due to the extensive labor required for its production. It is also high in caffeine due to the shading process. However, the caffeine content in your cup will vary based on the preparation method, including the amount of tea leaves used, the volume of water, its temperature, and the infusion time.

Recommended vessels for brewing: a houhin (宝瓶) or a shiboridashi (絞り出し). If you don’t have either of them a standard kyusu or a cup would work. Feel free to reachout if you have any questions. 

Brewing Instructions:

Use 5g of loose leaf tea per 5oz (150ml) of water at 140°F for 2 minutes.

•This lower temperature is necessary due to the delicate nature of Gyokuro.

•Pour the water along the wall of your teapot to avoid pouring directly onto the tea leaves.

The lower brewing temperature helps extract the sweet and savory flavors of the tea leaves and results in a lower caffeine level.

If 5g of tea is too strong, start with 3g and adjust to your preferred taste.

Alternative Brewing:

•Use 1 tsp (3g) of tea per 8oz of water at 175°F for 1-2 minutes.
