Tasting Notes: The nose is plush yet toasty, carrying grape skin, dried cherry, cinnamon, watermelon taffy, and smoked custard into a warming oak. It keeps dancing between soft jam, nuanced spice, and deep black raspberry lava cake, no doubt a product of the purposeful blending.
About: The goal for this blend was to create a whiskey with bold enough flavor to stand up to even the boldest cigar, without utilizing any traditional spirit finishes. Only secondary oak casks, including toasted, new charred American oak, and French oak. After our initial test blends, the French oak was coming through a bit too dominant. So I went back to a run of straight bourbon barrels that I knew would do two things: balance out the tannins and spice of the French oak, and add subtle fruit to round out the profile. The addition of that 9.5 year MGP bourbon brought it all together.
4 barrel blend - 1 Toasted, 1 French and 1 New level 3 char double oaked from a heritage distillery in Bardstown, KY with a mash bill of 78% corn, 10% rye and 12% malted barley at 8 years old. The 4th barrel is a 9-year 6-month year barrel of straight bourbon whiskey from MGP in Lawrenceburg IN.
