For this experimental NEIPA, DJ returned to the hallowed ground of the Katoomba brewhouse to personally brew this batch whilst trialing some new techniques. We've completely changed up the hop addition timings, the dosages and completely broken every rule we’ve had for dry-hopping temperature and durations. As a result, he’s made a complex IPA that provides a moderate bitterness through the middle, a creamy finish and heightened flavours of ripe oranges, peaches, apricots and a hint of passionfruit thanks to choosing Idaho-7, Citra, Galaxy and Nelson Sauvin hops.
