Dried scallops or dried scallops are a Cantonese-style dried seafood product made from the adductor muscles of scallops. Due to its high content of free amino acids such as glycine, alanine, and glutamic acid, it has a rich and umami taste. It is also rich in nucleic acids such as inosinic acid, amino acid by-products such as taurine, and minerals such as calcium and zinc.

Scallops are made by cooking raw scallops and then drying them.
