2025 Havilah Pinot GrisSourced from a single grower on the East Tamar, near our Three Wishes site at Hillwood. The fruit came in later this year and was gently direct pressed to tank. Winemaking was deliberately simple, with a focus on preserving purity and achieving a clean, classical expression of Pinot Gris. The wine rested on lees for several months before blending, then settled again ahead of bottling. Paler in colour than last year, yet still generous and expressive
