These gaiwans were made using the doucai technique that originated in Ming Dynasty China. The studio follows the traditional process and recipes, making this a fanggu quality piece.

Doucai 斗彩 is a porcelain painting technique that uses both 釉下青花 youxia qinghua, "underglaze cobalt blue painting," and 釉上彩 youshangcai "overglaze painting."

Part of the painting is first applied to the porcelain surface with cobalt blue paint (qinghua). A thin layer of glaze is applied over the qinghua and then the porcelain is fired at a high temperature. The surface of the piece is then painted again. The second layer of details is added with a greater variety of colours, and then the piece is fired once more.

The process of making doucai porcelain is time-consuming for the artist and the studio. Not many Ming-era pieces were made and few survived, making doucai antique pieces extremely precious. The doucai technique was revived first in Taiwan and then in Jingdezhen and it remains a time-consuming and labour-intensive process.
