This lot comes from El Placer, the flagship project of Sebastián Ramírez, a fourth-generation producer in Quindío, Colombia, known for taking controlled fermentation to a scientific level.
Where many farms focus solely on cultivation, Sebastián has turned El Placer into a processing laboratory, building protocols around temperature, pH monitoring and yeast modulation. He works with neighbouring farmers as well, offering access to processing infrastructure that allows experimental coffees like this one to exist.
This particular lot features Pink Bourbon cherries co-fermented with real mango pulp, creating a fruit-saturated profile while preserving the underlying clarity and structure of the variety.
The cherries undergo a two-stage anaerobic fermentation:
120 hours in whole cherry, sealed in tanks with added yeast cultures to initiate controlled fermentation.
72 hours in mucilage, now with CO₂ injection and fresh mango pulp, further enhancing ester formation and tropical aromatics.
After fermentation, the coffee is dried in a honey-style process, allowing sugars and fruit compounds to bind to the seed before final stabilization.
The result is a highly expressive but balanced cup — distinctly fruity without becoming overwhelming.
