Procanico is the official synonym for Trebbiano Toscano in Maremma. Genetically identical to Trebbiano, but in reality a less productive and higher quality biotype, especially in terms of aroma. This wine comes from a vineyard that is about sixty years old, located on volcanic tuff soil in Pitigliano. 
Fermented for two weeks with the skins in cement, the wine then remains on the fine lees until summer when it is bottled. It is a wine with good ageing potential, so if you can resist, leave it in the cellar for a while and it will surprise you.
