When Pheasant’s Tears was established, their first vineyard was a 9 acre plot of Saperavi in Tibaani in the Alazani valley. In bygone years it was the bottom of a sea when the Black and Caspian were united — you can still find seashell fossils in the soil. So even though it’s not so close to any modern sea, you still often get a salinity in the wines from Tibaani. One of the few red grapes with pigmented flesh, Saperavi is dark & funky, with a persistent rich berry fruit, & notes of plum, black currant, earth and smoke. There's something about the Rhone-like rusticity that really comes through here. A stunning wine from Georgia!
